About bmc brewing
bmc brewing (Bite My Cookies Brewing Company) is a family-owned and operated nanobrewery that opened in mid-2021 after more than 30 years in the making. The Rice family who owns the brewery formerly worked as scientists in drug discovery cell biology biochemistry and agriculture while dabbling in homebrewing on the side. This unique background inspires their creative beer names like Mendel's Dominant Recessive Kölsch (named after the founder of modern genetics) and Hopper's German Wheat Ale (honoring computer scientist Grace Hopper).
The Brewing Experience
The brewery features 18 taps filled with beer brewed on-site using ultra-purified reverse osmosis water which allows better batch-to-batch consistency. They source ingredients as locally as possible including grains from Epiphany Craft Malt in Durham hops from Bee Hoppy Farms in Chatham County and coffee roasted on-site by Vortex Roasters. Their beer selection includes everything from traditional styles like Kolsch Pale Ale Stout and IPA to innovative seasonal offerings. In addition to their own beers they feature one tap with Hopped Hard Cider and rotating flavored meads from neighbors Chatham Cider Works and Starrlight Mead.
Sustainability and Community
bmc brewing is deeply committed to sustainability and community. They use as much solar power as possible to run the brewery and taproom. Their unique approach to sustainability includes processing spent grains from brewing into flour to make delicious cookies sold to customers - hence the full name Bite My Cookies Brewing Company. This gives them both a fun story and a tasty treat to share with visitors.
The Venue Space
The building houses the taproom brewery and the Smelt Art Gallery. The converted space has a quirky industrial vibe with artsy decor that creates a relaxed welcoming atmosphere. Both indoor and outdoor seating options are available allowing guests to enjoy their beverages in the scenic surroundings of The Plant campus. The venue is dog-friendly in outdoor areas.
Music and Events
bmc brewing hosts a robust calendar of musical events including Songwriter Open Mic nights. On select Sundays from 2-5 PM they welcome both original songs and covers. Thursday evenings at 7 PM feature original-song-only open mics. These events are hosted by Michael J. Brennan in a singers-in-the-round format where performers take turns and donations are split evenly among all artists. The venue also features pint nights special deals Sunday Brunch game nights and live music performances. They've partnered with neighbors at The Plant on collaborations and pairing dinners creating a vibrant community hub for craft beverages and acoustic music.

Located at The Plant in Pittsboro bmc brewing is part of the Chatham Beverage District and the Chatham County Craft Beverages and Country Inns Trail. The 17-acre campus is also home to Starrlight Mead Fair Game Beverage Copeland Springs Farm & Kitchen and many other local businesses.
